The pan must be burned into a gas stove or oven before use, and there is a detailed guide in the box. Heat the pan slowly and avoid large temperature changes. Important usage information: This pan is made of non-alloy carbon steel and must not be used for acidic foods (e.g. tomato, wine, citrus, vinegar) or for storing food. Acid can react with the steel and cause unwanted release of iron. The pan must be burned in before use and properly maintained to ensure a natural protective surface.
