The surface is burned in with vegetable oils, so you get a natural nonstick alternative that only gets better and better over time. Use and care: Avoid cleaning with soap. Heat the griddle slowly and avoid large temperature changes. Use extra fat at the beginning so that it builds up its natural nonstick effect. Important information on use: This griddle is made of non-alloy carbon steel and must not be used for acidic foods (e.g. tomato, wine, citrus, vinegar) or for storing food. Acid can react with the steel and cause unwanted release of iron. The board must be properly maintained to ensure a natural protective surface.
